Thanks for the tip! I don't like to use soy all the time either, I believe I used the rice milk option for this recipe :) It's delish!

Oooh this is beautiful! When I make cream-based vegan tarts, I don't like to use soy, so I puree cashews and water into a cream, and then follow the rest of the steps (adding sugar, etc.) you normally would. It is way satisfying and makes me feel like I'm being slightly healthier.

Thank you, Shayma! That's a great idea to get mangos from an Indian or Pakistani store. Fortunately here in Portland, or local grocery store New Seasons carries a great variety of them when in season. I really appreciate your kind words of support!

oh my gosh- this looks delectable. we have hundreds of breeds of mangoes in Pakistan- so this pie obviously appealed to me- greatly. where do you buy your mangoes from? sometimes you can get fantastic ones from Indian and Pakistani grocery stores- they are sweet and intense.
as for this new path youre on- wishing you all the best- and it's so cathartic, in a way, to cast off what we dont like to do and concentrate on those things which are our strength. x shayma

Total mango-key-lime pie--it's simply fantastic, and vegan! I'm quickly becoming more and more convinced by the way of the vegan-baking. It used to boggle my mind, but I've let that go too, and really enjoy most of it! Thanks for the supportive comment, It IS so powerful! I think you know something about that too ;)
